In my culinary journey, I had the privilege of working with Max’s Restaurants as the Food Committee Coordinator. During my time there, I was enchanted by their famed dessert, the Caramel Bar. Its luscious texture and heavenly taste made it an instant favorite across the Philippines.
Fueled by my love for this delectable delight, I decided to recreate the recipe after moving to New Zealand. Armed with my recollections, I embarked on several trials before successfully replicating Max’s Caramel Bar. Unfortunately, the original recipe was lost in the shuffle of life’s busy moments.
Despite this setback, I remained determined and sought help from a baking group. Their generous contribution led me closer to perfection, yet I still yearned for that signature Max’s flavor. After an arduous search, I found my scribbled notes and rediscovered the missing piece to the puzzle.
Today, I am excited to share with you the closely-guarded recipe that encapsulates the true essence of Max’s Caramel Bar:
Ingredients:
• 3 egg yolks
• 1/4 cup white sugar
• 1/4 cup brown sugar
• 3/4 cup butter
• 1 1/4 cups all-purpose flour
• 1/2 cup milk powder
• 1/4 cup condensed milk
• 1/4 cup Dulce de leche
• 2 tablespoons glucose
• 2 tablespoons dark Karo syrup
• 1 teaspoon vanilla extract
• 1/4 cup chopped peanuts
Procedure:
Cream the butter, white sugar, and brown sugar until light and fluffy. Add the egg yolks one at a time, continuing to mix.
Incorporate all the liquid ingredients - condensed milk, Dulce de leche, glucose, dark Karo syrup, and vanilla - and continue mixing.
In a separate bowl, mix the flour and milk powder, then add the mixture to the liquid ingredients. Mix until just combined; avoid overmixing.
Grease and line an 8x8 brownie pan. Pour the caramel bar batter into the pan, ensuring an even distribution.
Sprinkle the chopped peanuts on top and bake in a preheated oven at 150°C for approximately 45 minutes or until set.
The bar should still be soft to the touch but not dry. Allow it to cool before cutting into squares using a plastic spatula.
